Are the polarities of type J thermocouple wires color coded?
 
Answer:
Yes, ANSI/MC96.1 Red is negative and white is positive (Japanese JIS C 1610-1981 is the opposite).

How can I determine the thermocouple type on old unmarked thermocouples?
 
Answer:
The easiest way is to strip the wire back until you can see the color of the insulation on each leg of the thermocouple and then compare that to the color chart here: Thermocouple Chart
